Healthy Recipe - Garlic-Potato Linguine: Makes: 6 servings, Ingredients: 8 new potatoes, 3/4 cup cooked green beans, 10 ounces of your favorite pasta, 1/2 cup vegetable stock, 3/4 cup green peppers, sliced, 1/2 cup onions, chopped, 1 tablespoons garlic, minced, 3 teaspoons red pepper flakes, 1/2 cup tomato juice, 4 cups mixed greens, Directions: Bake the potatoes at 350 degrees F for 35-40 minutes. Cut the potatoes into small chunks. Cook green beans and immediately rinse in cold water. Cook pasta according to package directions. Drain well, and return to the pot. Set aside.
